In the Kitchen: Casseroles Are Fun!

Sharing some of my favorite side dish and main dish casseroles this month.  This one is a family favorite, great simple rice casserole recipe. Its easy in the microwave too.  Now, this one I do use the canned soup in, but I'm sure that for the extra home made touch, you can use beef stock and sliced onions.


Rice Casserole

           
"Use a microwave to make this buttery rice casserole which uses cans of French onion and cream of mushroom soups."
INGREDIENTS:
2 cups instant rice
1 (15 ounce) can condensed French
onion soup
2 (10.75 ounce) cans condensed cream
of mushroom soup
1/4 pound butter, cubed
DIRECTIONS:
1.         In a 9x11 inch microwave safe dish, mix together the rice, French onion soup, mushroom soup and butter.
2.         Cook in microwave oven on high power for 10 minutes or until boiling. Decrease power to medium, stir and cook for 20 minutes. Serve when all liquid is absorbed.
