Recipes I Love ~ Traditional Ham Soup

This is a what to do with the leftovers from Easter dinner recipe.  After you've eaten all the ham sandwiches, ham and cheese omelets, ham quiches, and ham scalloped potatoes you can stomach that is.  




1 cup diced onion
1T minced garlic
6 cups ham broth
1/2 t black pepper
3 cups shredded cabbage
2 potatoes, diced-  note- I use red and don't peel them...
2 carrots, diced
2 cups diced ham
2 T chopped fresh parsely
1 t caraway seed
dash of dry mustard

saute onions and garlic in oil till softened
add remaining ingredients
 cook over low heat until potatoes and carrots  are tender...



 You can use chicken stock in place of the broth if you don't have the time or desire to simmmer a ham bone for 12 hours to make the broth. 

According to Rachel Ray- you can use apple cider...haven't tried that myself... if you do, drop me a line and let me know how it turns out, ok?
