Corn Cakes

Recipe Theme of the Month: Nostalgia
Hey there! I've been thinking a lot about recipes my mom used to make, that I loved as a kid but never seem to serve as an adult. This is a simple pancake recipe that was famous in our house for Saturday morning breakfasts. Served with honey or maple syrup, these are a tasty treat.

Sweet Corn Cakes
Ingredients:
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
2 beaten eggs
1 can cream-style corn
2 cups milk
1/4 cup melted butter
Preparation:
Combine dry ingredients in mixing bowl. Combine eggs, corn, milk and butter. Stir into dry ingredients, mixing lightly. Bake on lightly greased griddle or in lightly greased skillet until golden brown, turning once. Keep corn cakes warm in oven or warming drawer until all are cooked.
Serve hot with butter and maple syrup.

Can't beat these pancakes for comfort food with a half dozen slices of bacon, or a few sausage links.
Thanks for stopping by!

  1. I love these too but mom made them as a side dish at dinner She added a can of whole corn or the mexicorn and finely chopped onions sometimes even a little minced bell pepper. she would drop by spoonful sort of like a hushpuppy.. mmm they were good.
